1 - 3 (14 oz) cans sweetened condensed milk
1 - 3 pint-sized wide mouth mason jars
Fill each jar with one can of the sweetened condensed milk and put the lids on the jars. Put the jars on the trivet. Pour water into the Instant Pot until it comes all the way up the sides of the jar(s) almost to the lids. Close the Instant Pot, make sure the valve is set to Sealing, and push Pressure Cook (or Manual). Adjust time using the + and - buttons to get to 35 - 55 minutes. (the longer they cook, the darker the caramel.) When it beeps that it's done, flip the valve to Venting for a quick release. When the pin drops, open the pot. Carefully remove the jars and let them cool on the counter until lukewarm before opening.

"I've done this a couple of ways. I did them using the 'leave in the can and remove the label' method. It made great caramel, but I had a glue ring around the inside of my pot that took a lot of elbow grease to remove. So I prefer this method now."-Ruth McCusker
